It's simple and seems sturdy enough. Basically, one screw can be loosened in order to increase or decrease the distance between the cutter wheels, and then you tighten the screw again to make sure the wheel stay at the distance you want. The bad: There is a HUGE amount of wobble in the cutter wheels, almost 1/4 inch! That's immense! If this had just one wheel, I don't think you could depend on it even to cut a pizza. Because of the wobble, not only do the wheels not cut straight lines, they also don't make proper contact with the hard surface under the dough, which means you have to make the cuts more than once. Of course this is a problem, too, because a wobbly cutter makes it difficult to go over the same cuts twice. I made croissants with this, which was a big mistake. They came out a lot messier looking than was aceptable, even after I had to try to fix the cuts manually before rolling them up...
