It not only holds a full recipe of angel food cake, which can easily be sliced for serving, rather than the traditional round pan product, but other cakes as well. But my main reason for adding additional pans, was to accommodate my recipes for whole grain sourdough, multigrain breads. The loaves are very large and heavy and so convenient, since they can be slice uniformly. This is fantastic for family sharing, allowing some slices to be stored in the frig or freezer for later use in smaller family units. I have many professional pans, having been in an experimental kitchen of a major packaged frozen food company in my youth, and have been developing recipes for over 50 years at home since, cooking three meals a day for a family of seven, and additional generations. The issue is that I can't get the cake unstuck from the bottom of the pan. I've tried parchment paper on only the bottom (not the sides) and the cake just sinks in as the parchment doesn't hold the cake to the pan when inverted. I've asked on the Wilton forum and the main answer was: "now you know why the tube pan comes in two parts. A friend of mine said she was given an "old" tube pan which is much heavier. She threw away this one. I've made my Christmas fruit bread in it, and have just taken an angel food cake out of the oven. I have purchased 4 of these, 3 for gifts. Now, if you would offer a lovely cut glass tray to put such an interestingly shaped angel food cake on, I would buy that, too! The only thing I have that it fits on is an ugly cookie sheet! |
