I later inherited a few of her aluminum pans and I couldn't believe the difference. My cookies were no longer crispy and brown on the outside and soft in the middle...they were baked evenly. I was also able to scub the sheet and place it in the dishwasher, something you can't do with non-stick varieties. Additionally, there is no danger of having teflon flake into your baked goods. Aluminum is tried and tested and provides professional results. Buy the right cookie sheet and buy it once! I have both the half and quarter sheets by Nordic.
